Barley Cream

Ingredients

1 1/2 dl (2/3 cup) pearl barley
4 dl ( 1 2/3 cups) water
1 liter (quart) full fat milk
salt
1 dl (1/2 cup) sugar
2 dl (3/4 cup) whipping cream

Instructions

1) Soak the barley in the water overnight. Simmer in the soaking liquid 30 minutes. Drain.

2) Add the milk and cook 30 minutes, until tender. Flavor with a few grains salt and sweeten with sugar. Chill.

3) Lightly whip the cream. Fold in the barley porridge.

4) Serve with sauce made from berry juice concentrate.
