2 Tbs. oil 1 in./2.5cm ginger in thin matchsticks 2 spring onions, in strips 1 1/2lb/700g sea bass squeeze of lemon juice good dash soy sauce salt and freshly ground black pepper a little oil for brushing 1oz/25g butter 1 Tbs. freshly chopped parsley 2 cloves garlic, peeled and finely chopped
Instructions
1) Heat oil in a pan and stir fry ginger and spring onion strips until soft. Deeply slash the bass on both sides and sprinkle with lemon juice and soy. Season inside the fish-and the slashes. Tuck the strips inside cavity. Place on a baking sheet and brush with oil.
2) Bake at 400F, 200C for 20 minutes-or until cooked through.
3) Heat butter in a pan and stir in parsley and garlic.
4) Transfer fish to a serving platter and pour parsley and garlic butter along the side.
