Bacon-Potato Dumplings

Ingredients

225 g (8 oz.) bacon, diced
2 Tbs. minced onion
pepper
750 g (1 2/3 pounds, about 4 large) boiled potatoes
1-2 eggs
3/4 liter (3 cups) full fat milk
3 3/4 dl (1 1/2 cups) flour
1 tsp. salt
3 liters (quarts) water
1 Tbs. salt

Instructions

1) Fry the bacon and onion. Sprinkle with pepper,

2) Mash the potatoes. Beat the egg and milk together and add. Sift over the flour and salt and mix to a semi-firm dough.

3) Make the dumplings immediately, or the dough will become soft.

4) Roll the dough into a long sausage. Cut out pieces of equal size and make round cakes with an indentation in the center.

5) Place a spoonful of the bacon-onion mixture there, then press the dough over the filling.

6) Roll until completely round. Flatten slightly.

7) Simmer in lightly-salted water about 10 minutes.

8) Serve with bacon fat and mashed boiled rutabagas. Enjoy!
