Astrid’S Pepper Sauce

Ingredients

1 Tbs. extra virgin olive oil
1/3 cup minced shallot
2 cloves minced garlic
1/2 cup cognac
1 cup red wine
3 cups brown stock
2 Tbs. peppercorns - roughly crushed
1/2 cup heavy cream
2 Tbs. cornflour/starch
3 tsp. Dijon mustard

Instructions

1) Saute til soft the garlic & shallot in oil.

2) Deglaze w/cognac until bits are scraped off pan.

3) Add stock & red wine & peppercorns & simmer.

4) Add cornstarch to cream & mustard. Stir in to pan until thickened. Enjoy!
