Artic Char In Red Currant Sauce
Ingredients
600 g ( 1 1/3 pounds) boneless and skinless Arctic char or ocean trout fillet
flour seasoned with salt and pepper
butter
1 liter (quart) fish stock
2 dl (3/4 cup) red currant jelly
1 dl (1/3 cup) minced onion
2 branches fresh thyme (or 1/2 tsp. dried)
1 1/2 dl (2/3 cup) 35% fat sour cream
Instructions
1)
Clean and dry the fish.
2)
Dip in seasoned flour and fry in butter, about 2 minutes per side. Remove from pan.
3)
Deglaze the pan with fish stock and add the jelly, onion, and thyme.
4)
Reduce over medium heat until half the original amount remains.
5)
Stir in the sour cream.
6)
Return the fish to the pan and simmer until warm, about 2 minutes. Season sauce, if necessary.
7)
Serve with sauteed wild mushrooms sprinkled with chives or parsley, a branch of fresh red currants and boiled almond potatoes. Enjoy!
