Arctic Char Stuffed With Birch Shoots

Ingredients

100 g (4 oz.) fresh birch shoots
1 dl (1/3 cup) vegetable oil
4 whole Artic shar or brook trout, about 250 g (9 oz.) each
salt
pepper
100 g (3 oz.. 1/3 cup) butter
1 dl (1/3 cup) chopped chives

Instructions

1) Mince the birch shoots and marinate 24 hours in vegetable oil.

2) Preheat the oven to 180 C (350 F) or heat the grill.

3) Cut the heads off the fish. Slit the stomach and clean. Wash all blood from around the backbone.

4) Salt and pepper the cavity.

5) Beat the butter with the birch shoots and chives.

6) Stuff the fish with the mixture.

7) Pack each separately in aluminum foil.

8) Bake or grill 15-20 minutes.

9) Serve with a green salad and boiled potatoes. Enjoy!
