For the muffins: 4oz/100g plain flour pinch of salt 1 tsp. baking powder 1oz./25g butter 1oz./25g caster sugar 1 eating apple, cored, peeled and grated 2 Tbs. milk (approx) 1 egg, beaten caster sugar for sprinkling For the filling: 4 eating apples, peeled and very finely chopped lemon juice 6 Tbs. water 2 Tbs. runny honey 2oz./50g Boursin with garlic
Instructions
1) Sift flour, salt and baking powder into a bowl.
2) Rub in butter and stir in sugar and grated apple.
3) Add enough milk to form a soft, but not sticky, dough.
4) Turn out on to a lightly floured board and knead gently for 1 minute.
Wrap in foil and chill for 15 minutes.
5) Roll out to 3"/1.5cm thick. Cut into rounds with a 2"/5cm cutter.
6) Place on a greased baking tray and brush with beaten egg.
7) Cook in a preheated oven 375F, 190C for 15 minutes or until risen and firm.
8) Remove and cool on a wire rack. Sprinkle with sugar.
9) Meanwhile, make the apple filling. Place apples, lemon juice, water and honey in a pan and cook until softened. Reserve and cool.
10) Split muffins and spread base with cream cheese. Top with apple mix and sandwich together with lid.
