8oz./225g plain flour 1 1/2 tsp. baking powder pinch of salt 4oz./100g sugar 8oz./225g peeled, cored and roughly chopped Bramley apples 4oz./100g sugar lots of grated nutmeg 2 eggs For the topping: 3 Tbs. lemon juice 2 Tbs. sugar
Instructions
1) Sift together flour, baking powder and salt. Then rub in the butter until the mixture resembles fine breadcrumbs.
2) Add chopped apples and a good squeeze of lemon juice, plus sugar and a generous grating of fresh nutmeg.
3) Beat the eggs together then stir this into the mix to make a firm dough.
4) Pack this mixture into a buttered, lined 7"/18cm cake tin. Smooth over the top with a palette knife.
5) Bake in a preheated oven, 350F, 180C for 50 minutes, or until the cake is risen and firm.
6) While it is cooking, mix together lemon juice and sugar for the glaze.
As soon as the cake comes out of the oven, pour this mixture over and let it seep through. Cool in the tin, then turn out.
