Almond Nibs
Ingredients
2 1/2 oz., 65g blanched almonds
2 oz., 50g icing sugar
4 oz., 100g flour
4 oz., 100g butter, chilled and in small pieces
2 Tbs. flaked almonds, crushed
flaked almonds and caster sugar for decoration
Instructions
1)
Place almonds and icing sugar in a blender and whizz until the mixture resembles fine oatmeal.
2)
With the motor running on slow, add flour.
3)
Add butter bit by bit, waiting until each addition is incorporated.
4)
Add crushed flaked almonds.
5)
Continue blending until mixture sticks together. Remove and knead on a lightly floured board until you have a workable dough.
6)
Roll into a sausage shape and wrap in film. Chill for an hour in the fridge.
7)
Remove from fridge and unwrap. Using a sharp knife, cut dough into thin slices.
8)
Place well apart on a greased baking sheet. Top each one with a few flaked almonds. Sprinkle with caster sugar.
9)
Preheat oven to 375F,190C.
10)
Bake 8-10 minutes or until golden and crisp.
11)
Remove from oven and leave to cool slightly on the baking tray before removing to a wire rack to cool completely.
12)
Store in a airtight tin.
