Parsnip Rosti

Ingredients

1 large carrot
2 large parsnips
1 onion
1 large potato
2 eggs
salt and ground black pepper
oil for frying
parsley to decorate

Instructions

1) Peel and grate carrot, parsnips, onion and potato. Mix together with beaten egg and seasoning.

2) Cook mixture in batches. Heat oil in a large shallow pan. Place tablespoons of rosti mixture carefully in the pan and press down lightly to make round cakes. Fry until golden, then turn over and cook the other side. Decorate with parsley.
