Ingredients
6oz/175g plain flour
2oz/50g caster sugar
4oz/100g butter in pieces
extra caster sugar for sprinkling
Instructions
1)
Sift flour into a bowl with the sugar. Rub butter into flour and sugar until the mix resembles breadcrumbs.
2)
Gather together into a ball and knead lightly until smooth on a floured board.
3)
Butter a 7in/16cm shallow, round non-stick cake tin and press the mixture into it evenly.
4)
Mark into 8 triangles, and make fork prints around the edge.
5)
Bake at 350F, 180C for 30 minutes, then turn down 325F and cook for 10 minutes more.
6)
Cut section lines again. Leave to cool in the tin, then gently lift out segments with a cake slice. Serve sprinkled the caster sugar.
