Rice Cake With Nuts And Raisins
Ingredients
1 liter (quart) full fat milk
1 dl (scant 1/2 cup) round grain rice
1/2 tsp. salt
2 Tbs. sugar
3 Tbs. flour
1 3/4 dl (3/4 cup) raisins
2-3 tsp. tumeric (for color)
2 dl (3/4 cup) chopped almonds
6 eggs
Instructions
1)
Bring the milk to a boil.
2)
Add rice and salt. Cook over low heat 30-40 minutes, stirring occasionally. Cool.
3)
Preheat the oven to 180 C (350 F).
4)
Stir sugar, flour, raisins, tumeric and almonds into the porridge.
5)
Beat in the eggs, one at a time.
6)
Pour into a greased 1 1/2 liter (6 cup) loaf pan and bake 30-40 minutes.
7)
Serve lukewarm with fresh berries and whipped. Enjoy!
