Beef Tenderloin
Ingredients
1 kg (2 1/4 pounds) beef tenderloin
salt
freshly ground black pepper
3 Tbs. butter
3-4 dl (1 1/2 cups) beef stock
2 Tbs. flour
Instructions
1)
Tie the meat. Sprinkle with salt and pepper. Brown on all sides in butter.
2)
Add stock and simmer, covered,15-20 minutes, turning several times. The meat should have a rosy center. Let the meat rest 5 minutes before slicing.
3)
Thicken the pan juices with flour stirred into a small amount of cold water, if desired.
4)
Serve with boiled potatoes, brown gravy and vegetables. Enjoy!
