Trifle
Ingredients
250 g (8 oz) almond macaroons
2 Tbs.sliced almonds
2 1/2 dl (1 cup) sherry or Madeira
Vanilla cream:
5 Tbs. (1/3 cup) cornstarch
3 egg yolks
5 Tbs. (1/3 cup) confectioner's sugar
2 tsp. vanilla sugar (1 tsp. vanilla extract)
5 dl (2 cups) full fat milk
2 dl (3/4 cup) whipping cream
Instructions
1)
Crush the macaroons and soak with the almonds in sherry 1 hour. Drain.
2)
Whisk together cornstarch, egg yolks, sugar, vanilla sugar ( but not extract) and 1 dl (1/2 cup) milk.
3)
Bring the remaining milk to a boil.
4)
Whisk the egg yolk mixture into the boiling milk. Return to the boil. Cool.
5)
Stir in vanilla extract.
6)
Whip the cream.
7)
Layer macaroons and almonds, vanilla cream and whipped cream in a glass bowl.
