Potato-Meat Stew
Ingredients
2 1/4 kg (4 1/2 pounds) potatoes
750 g (1 2/3 pounds) dried mutton
500 g (18 oz., 5-6 large) carrots, cubed
1 1/4 liters (5 cups) skim milk
70 g (2 1/2 oz., 4 1/2 Tbs.
butter
salt
chopped parsley
Instructions
1)
Boil the potatoes in their skins until tender, 20-30 minutes, peel and grind.
2)
Simmer the meat in water to cover about 60 minutes. Add the carrots during the last 10 minutes.
3)
Cube the meat. Return the ground potatoes to the pot, add the butter and pour over the milk. Bring to a boil, stirring constantly.
4)
Add meat and carrots. Season with salt.
5)
Serve in small bowls. Sprinkle with parsley and serve with flatbread.
