4 ripe pears 1/2 wineglass white wine water to cover 1 cinnamon stick For the sauce: 1/2pt/300ml water 2oz/50g caster sugar 1 tsp. cocoa powder 3oz/75g plain chocolate
Instructions
1) Peel pears carefully, leaving stalks intact. Place in a pan with white and water. Add cinnamon stick. Bring to just bubbling. Lower heat, cover pan and gently poach until pears are tender.
2) Meanwhile, make the sauce. Heat half the water with sugar, cocoa and chocolate until chocolate has melted. Stir and heat gently until smooth.
3) Stir in remaining water and bring to the boil. Lower heat and simmer for 15 minutes or until mixture is dark brown and shiny.
4) Remove pears from poaching liquid with a slotted spoon. Drain and place on plates. Spoon a little chocolate sauce over each pear to serve.
