Parmesan Oatbread

Ingredients

4oz/100g medium oatmeal
1/2 tsp. bicarbonate of soda
1/2 tsp. salt
1 Tbs. melted butter
4 Tbs. hot water
2 Tbs. finely grated fresh Parmesan

Instructions

1) Place oatmeal, bicarbonate of soda and salt in a bowl and mix. Add melted butter and gradually add enough hot water, stirring all the time, until mixture forms a stiffish dough. (You may need slightly more or less for this.) Work in Parmesan, then roll in a little extra oatmeal.

2) This dough cannot be rolled out. Grease a 5"/12.5cm nonstick sandwich tin. Take the dough and press it with the fingertips into the tin evenly. Using a sharp knife, mark out 8 triangles, cutting through to the base of the dough. Bake in a preheated oven, 375F, 190C for 20 minutes or until biscuits are dry and firm. Turn out upside down on to a wire rack and leave to cool. Break into triangles.
