My Red Beans & Rice

Ingredients

2 cups onion
2 cups green pepper
2 Tbs. minced garlic
1/4 tsp cayenne pepper
thyme
1 1/2 tsp. oregano
2 tsp cumin
1/4 tsp red pepper
kidney beans
1-2 cups rice
can tomatoes
jalepeno
1 1/2 cups water
salt & lots of fresh ground blk pepper
2 Tbs sherry vinegar
1 tsp. ground coriander
1 tsp. crushed fennel seeds
6 dash hot pepper sauce

Instructions

1) Saute onion, garlic, peppers until soft.

2) Add spices.

3) Add beans, & tomatoes - 3 mins.

4) Add water & remaining ingredients. Cook for 4 mins.

5) Serve w/shrimp & spicy sauce, chicken, fresh bread, ribs. Enjoy!
