Mushroom Warm Salad

Ingredients

2 Tbs. flaked almonds
3 Tbs. light olive oil
2 cloves garlic, peeled and crushed
6 large flat field mushrooms, sliced
2 little gem lettuces, quartered and rinsed
salt and freshly ground black pepper

Instructions

1) First toast the flaked almonds and reserve.

2) Heat oil in a pan and add garlic and mushrooms. Cook quickly over high heat until just beginning to soften.

3) Add the rinsed lettuce quarters and toss around in garlic and mushroom mixture for a further 30 seconds.

4) Season with salt and plenty of black pepper and sprinkle toasted almonds over.

5) Pile on to a pretty plate and serve immediately.
