Mean Beans
Ingredients
14oz/400g can kidney beans, drained
7oz/200g can canellini beans, drained
7oz/200g can borlotti beans drained
7oz/200g butter beans, drained
11oz/300g broad beans (or cooked frozen)
8 stoned black olives, chopped
1 medium onion, peeled and finely chopped
4 anchovies, thinly slivered (optional)
1 Tbs. fresh parsley finely chopped
For the vinaigrette:
4 Tbs. white wine vinegar
2 cloves garlic, peeled and crushed
1 tsp. Dijon mustard
salt and ground black pepper
Instructions
1)
In a large bowl mix kidney, canellini, borlotti, butter and broad beans together. Add the olives, onion, slivered anchovies and parsley.
2)
Shake dressing ingredients together in a screw-top jar. Pour over bean mixture and toss gently so beans don't break up.
