Madeira Pudding
Ingredients
12 sheets (4 Tbs. powdered) gelatin
5 dl (2 cups) full fat milk
4 eggs
3 1/2 dl (1 1/2 cups) confectioner's sugar
2 dl (3/4 cup) Madeira
Instructions
1)
Soak the gelatin sheets in cold water (or sprinkle the powdered gelatin over 3 Tbs. of the milk) 5 minutes to soften.
2)
Bring the milk to a boil.
3)
Squeeze excess water from the gelatin sheets (disregard for powdered gelatin.)
4)
Melt the gelatin in the milk. Cool slightly.
5)
Beat the eggs with the sugar until light and lemon-colored. Whisk into the milk mixture.
6)
Add the Madeira, then strain into a metal bowl. Chill until syrupy.
7)
Whip the cream and fold into the partially-set pudding.
8)
Pour into 10-12 rinsed individual dishes.
9)
Note: Other kinds of wine or orange juice can be used instead of Madeira.
