Herring Salad
Ingredients
1 medium onion
1 medium pickled beet
1/2 large apple
10 cm (4") cucumber
150 g (5 oz.) herring fillets
3 hard-cooked eggs
2 Tbs. capers
fresh dill
grated horseradish
Marinade: 1 dl (1/3 cup) veg. oil, 2 Tbs. white wine vinegar, 1 Tbs. herring brine, pepper
Instructions
1)
Cube onion, beet, apple, cucumber & herring.
2)
Cut the egg lengthwise into wedges.
3)
Arrange each ingredient in small piles on a serving platter.
4)
Combine ingredients for marinade & drizzle over.
5)
Serve w/ cold, whipped sour cream, coarse bread, beer & aquavit. Enjoy!
