Herring Barley Soup

Ingredients

2 dl (3/4 cup) pearl barley or green or yellow peas
6-8 salt herring fillets
1 1/2 liters (quarts) lamb stock
2 med. carrots, cubed
1/2 small rutabaga, cubed
small wedge cabbage, in small chunks
1 med. onion, cubed
1 large potato, cubed
salt

Instructions

1) Soak the barley & herring separately in cold water overnight.

2) Drain the barley, cover with the lamb stock & bring to a boil.

3) Lower heat, then simmer 30 min. Add the vegetables & potatoes.

4) Cut the herring into 1 cm (1/2") slices.

5) Simmer carefully about 5 min. in water, then transfer to the pot with the vegetables.

6) Season with salt & serve with flatbread. Enjoy!
