2 large chicken supremes poached or microwaved 1 green pepper 1/2 cucumber 8 spring onions chive batons to decorate For the dressing: 4 Tbs. olive oil 1 Tbs. white wine vinegar 1 tsp. wholegrain mustard good dash of soy sauce salt and ground black pepper
Instructions
1) Discard bone from supremes and cut flesh into even slices.
2) Slice green peppers into matchsticks. Cut cucumber into 3in/7.5cm lengths and then into strips. Trim and chop spring onions.
3) Place all ingredients in a salad bowl. Shake dressing ingredients in a screw top jar and pour over salad about 15 minutes before serving. Toss and serve decorated with chive batons.
