1 kg (2 1/4 pounds) fresh pollack or haddock 1 liter (quart) potatoes, in chunks 2 Tbs. salt 2 large onions, quartered 1 dl (scant 1/2 cup) full fat milk 3 Tbs. potato starch 1 Tbs. flour 150 g (5 oz.) bacon, in large cubes Cooking liquid: fish stock or salt water (1/2 tsp. salt per liter (quart) water) bacon rind
Instructions
1) Grind fish once with potatoes, salt and onions.
2) Gradually add milk.
3) Add both flours, stirring until well-blended.
4) Form into about 20 large dumplings, filling each with a bacon chunk.
5) Simmer in the cooking liquid about 20 minutes.
6) Serve with boiled carrots, fried bacon cubes, mashed rutabagas and boiled potatoes.
