Easy Dhal Vegetarian

Lentils are a good source of fibre and protein – good for the heart and aiding in digestion and healthy cholesterol levels. Can be enjoyed with naan bread; vegetables or chicken – Enjoy

Ingredients

400g14oz. dried red split lentils
1 onion, diced
2 cloves garlic, minced
1 1/2 tsp cumin
1 1/2 tsp turmeric
1 1/2 tsp coriander
2 green chillies, diced
2cm/1inch fresh ginger, diced
Bunch fresh coriander
Groundnut oil
fresh pepper to taste

Instructions

1) Rinse lentils and place in saucepan, cover with water and bring to boil.

2) Once boiling, reduce to simmer and add tomatoes, ground coriander, turmeric and cumin.

3) Meanwhile brown onions, garlic, chillies and ginger.

4) When lentils are almost cooked, add onion,garlic, chili, ginger mix

5) The lentils are cooked when soft and beginning to break down.

6) Serve with fresh coriander on top.
