Cod Tongues In Sauce

Ingredients

800 g (1 2/3 pounds) cod tongues
flour seasoned with salt and pepper
butter
Sauce:
3 Tbs. butter
1 1/4 dl (1/2 cup) minced onion
1 1/4 dl (1/2 cup) minced red bell pepper
3/4 dl (1/3 cup) flour
about 5 dl (2 cups) fish stock
1 dl (1/3 cup) 35% fat sour cream
1 dl (1/2 cup) whipping cream
soy sauce
salt
pepper

Instructions

1) Wash and dry the tongues well.

2) Dip in seasoned flour and fry in butter, about 2 minutes per side. Transfer to a serving platter and keep warm.

3) Saute onion and pepper in the same butter.

4) Stir in the flour. Gradually whisk in the fish stock, sour cream and whipping cream.

5) Boil 5 minutes, until thickened.

6) Add a few drops soy sauce for color, if desired, and season with salt and pepper.

7) Nap the tongues with the sauce and serve with boiled potatoes and cole slaw.
