3 Tbs. oil 2 large onions, peeled and finely chopped 1 clove garlic, peeled and crushed 2pt/1.1 ltr. vegetable stock 1 large potato peeled and cut into cubes 2oz/50g grated Cheddar cheese salt and freshly ground pepper extra cheese for serving
Instructions
1) Heat oil and fry onion and garlic together until softened and golden. Pour over stock and then add the cubes of potato. Bring to the boil and simmer, covered, until potato is tender, which takes about 10 minutes.
2) Whizz everything together in a processor until smooth, then return to a clean pan. Stir in cheese and season with salt and freshly ground black pepper. Serve this tasty soup in warmed bowls topped with extra cheese.
