2 Tbs. oil 4 large spring onions, green on, chopped into 1 in/2.5cm lengths 1 red pepper, deseeded and in chunks 2 cloves garlic, crushed 1 red chilli, deseeded and chopped 6oz/175g fillet steak in thin slivers 2 Tbs. dry sherry 1 Tbs. soy sauce salt and freshly ground black pepper 2oz/50g rice noodles oil for frying
Instructions
1) Heat oil in pan and fry spring onions, pepper, garlic and chilli over gentle heat until softened. Remove with slotted spoon and reserve.
2) Heat pan until really hot. Add beef and toss around over high heat to brown. Return vegetables. Add sherry and soy sauce and cook 2 minutes more. Season.
3) Heat frying oil in a deep pan and drop dry noodles in. They will wriggle into crispness in seconds. Remove with a slotted spoon, drain on kitchen paper. Add beef and serve.
