1 pizza base mix 3 Tbs. sunflower oil 2 Spanish onions, peeled and finely sliced salt and freshly ground black pepper 1 tsp. dried thyme 2 eggs 4fl oz/100ml double cream
Instructions
1) Make up pizza dough according to instructions and leave to rise in a warm place for approximately 30 minutes.
2) Meanwhile make the filling. Heat oil in a pan and fry onions over a very low heat until soft and golden.
3) Season with salt, freshly ground black pepper and sprinkle in thyme. Remove with a slotted spoon and cool. Whisk eggs with cream and season.
4) Knead the dough and then roll out on a lightly floured board so that it will fit and 8in/20cm flan ring on a greased baking sheet.
5) Spoon onions into dough base and pour over egg mix. Bake at 400F, 200C for 30 minutes, or until dough is cooked and golden and filling is set. The onion tart can be eaten hot, warm or served as a cold dish.
