Ham And Eggs Florentine

Ingredients

1oz/25g butter
1oz/25g flour
1/2pt/300ml milk
2oz/50g mature Cheddar
1 tsp. made mustard
salt and ground black pepper
4 eggs
1lb/450g pack frozen leaf spinach
walnut-sized knob of butter
lots of freshly grated nutmeg
4 slices cooked ham
paprika pepper

Instructions

1) Melt butter in a pan and stir in flour. Cook for 1 minute. Gradually add milk, stirring. Bring to the boil to thicken, stir in cheese, mustard and seasoning. cover top with buttered greaseproof and reserve.

2) Soft poach eggs in a poacher or in simmering water with a little vinegar added. Remove and drain. Meanwhile, cook spinach according to instructions and add butter, nutmeg and seasoning.

3) Transfer spinach to a flameproof dish and cover with ham. Arrange poached eggs on top and pour over cheese sauce. Grill to brown, then serve sprinkled with paprika pepper.
