6 rashers streaky bacon, de-rinded 1 1/2lb/1.1k center cut of hake on the bone oil for brushing salt and ground black pepper 2oz/50g unsalted butter 2 cloves garlic, peeled and finely chopped 1 Tbs. finely chopped fresh parsley juice of 1/2 lemon lemon twists and sprigs of flat parsley to garnish
Instructions
1) Stretch bacon with the back of a knife and wrap around hake. Brush with oil and season with black pepper. Bake at 375F, 190C for 30 minutes or until fish is cooked through. Transfer to a serving platter and keep hot.
2) Melt butter in a pan and when it is just beginning to turn golden, add garlic, parsley and lemon juice. Season and pour over hake just before serving. Garnish with lemon twists and parsley sprigs.
