Chicken Anastasia

Ingredients

2 Tbs. oil
1 onion, chopped
2 cloves garlic, crushed
3lb/1.4kg chicken cut into small pieces
1 tsp. curry paste
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. turmeric
2oz/50g ground almonds
zest and juice of half a lemon and half an orange
1/2 pt/300ml chicken stock
salt and freshly ground pepper
1/4pt/150ml plain set yogurt
thin strips of orange peel, blanched for decoration

Instructions

1) Heat oil and fry onion and garlic in a pan until soft but not brown.

2) Add chicken and fry until well browned. Remove chicken.

3) Mix curry paste with spices and almonds. Stir in the zest and juice of orange and lemon.

4) Add chicken stock. Return chicken to the pa then season. Simmer for 35 minutes. Stir in yogurt. Decorate with orange strips.
