Celeriac And Potato Royale
Ingredients
1 celeriac, pared
2 potatoes, peeled
1 onion, peeled and finely chopped
1 Tbs. oil
salt and freshly ground black pepper
2 eggs
1/2pt/300ml milk
1/4pt/150ml double cream
1/2oz/15g butter
Instructions
1)
Quarter and slice celeriac thinly. Slice potatoes and rinse. Blanch separately in salted water for two minutes. Drain.

Meanwhile, fry the onion gently in oil until softened.
3)
Grease an ovenproof dish and layer vegetables, sprinkling over onion and seasoning in between each layer. Top with celeriac.
4)
Beat eggs, milk and cream together and season with salt and freshly ground black pepper. Pour over vegetables and dot top with butter.
5)
Bake at 400F, 200C for 30 minutes, or until golden and set and vegetables are tender.
