Chorizo Ciabatta
Ingredients
1 large ciabatta
150g cooking chorizo (halved lengthwise)
75g Pesto
200g Roasted Peppers (jar)
Handful Rocket (Arugala)
Instructions
1)
Heat oven to 355f./160c/gas 4 to warm the ciabatta
2)
Put chorizo in a griddle pan on medium heat until slightly charred and cooked through (5 minutes each side)
3)
Open up warmed ciabatta and spread pesto on bottom.
4)
Layer with red peppers; warm chorizo and finally rocket.
5)
Sandwich together; cut in two and enjoy!!
