Goro

Ingredients

3 egg yolks
2 1/4 dl (1 cup) sugar
2 1/2 dl (1 cup) whipping cream
about 800 g (1 3/4 pounds, 13 1/4 dl, 5 1/2 cups) flour
1 tsp. cardamom
600 g (1 1/3 pounds, 2 1/3 cups) butter

Instructions

1) Whisk lightly together egg yolks, sugar and cream. Sift the flour and add.

2) Knead in the butter. Cover the dough with plastic wrap and refrigerate at least 2 hours.

3) Roll out the dough in a cool room. Use small pieces. Roll out to thin sheets.

4) Make cardboard templates the size of the goro iron. Cut out cookies using the templates as guides.

5) Bake on an ungreased "goro" iron.
