Snow Pudding

Ingredients

5 sheets (5 tsp. powdered) gelatin
1 3/4 dl (3/4 cup) sugar
juice of 3 lemons
6 egg whites

Instructions

1) Soak the gelatin sheets in cold water (or sprinkle the powdered gelatin over 2 Tbs. water) 5 minutes to soften.

2) Squeeze excess water from the gelatin sheets (disregard for powdered gelatin) and melt over low heat.

3) Beat sugar and lemon juice. Add the melted gelatin.

4) Beat the egg whites until stiff but not dry and fold in.

5) Pour into a rinsed glass bowl and chill at least 3 hours.

6) Serve with vanilla or caramel sauce.
