Potato Pudding

Ingredients

125 g (4 oz., 1/2 cup) butter
250 g (8 oz., 2 medium) boiled potatoes
2 tsp. flour
1 1/2 dl (2/3 cup) full fat milk
1 1/4 dl (1/2 cup) confectioner's sugar
grated rind of 1 lemon
4 eggs

Instructions

1) Preheat the oven to 200 C (400 F).

2) Grease and flour a 1-liter (quart) mold.

3) Melt the butter.

4) Mash the potatoes and add with the flour. Beat in the milk. Cool.

5) Stir in the sugar and the lemon rind.

6) Separate the eggs and beat in the yolks, one at a time, beating well after each.

7) Beat the egg whites until stiff but not dry and fold in. Pour into the prepared mold.

8) Place a cloth towel in the bottom of an oven pan. Place the mold on the towel (to keep it from moving). Add hot water to reach halfway up the sides of the mold.

9) Bake 40 minutes.

10) Serve with sauce made from berry juice concentrate.
