Potato Dumplings And Dip

Ingredients

750 g (1 2/3 pounds, about 4 large) potatoes
350 g (10 oz., about 2 medium) boiled potatoes
4 dl( 1 2/3 cups) barley flour
1 1/2 tsp. salt
Dip:
30 g (1 oz.) brown goat milk cheese (Ski Queen)
2 Tbs. sugar
4 tsp. flour
1 1/2 dl (2/3 cup) water
40 g (1 1/2 oz.) fat bacon or fresh fat pork belly

Instructions

1) Peel and grate the raw potatoes. Mash the boiled potatoes. Sprinkle the raw potatoes with some of the flour immediately, so that they do not discolor.

2) Add salt and remaining flour and mix well.

3) Make oval or round balls with a wet serving spoon.

4) Place a few at a time in boiling water-the water should always be boiling-and cook about 30 minutes.

5) Serve warm with dip.

7) Combine all ingredients except for the bacon.

8) Bring to a boil, stirring constantly. Simmer 10 minutes.

9) Melt the bacon or pork and pour it over the mixture. Serve in a sauce boat.
