500 g (1 pound) squid flour seasoned with salt and pepper butter small wedge cabbage 1 small onion or leek small chunk celeriac 2 medium carrots 1/4 small rutabaga 1 Tbs. soy sauce 4 eggs 4 ss (1/4 cup) full fat milk
Instructions
1) Clean the squid. Flay and cut into 1x5 cm (1/2x2") strips.
2) Dip in seasoned flour and fry on both sides in browned butter. Reserve.
3) Shred the cabbage, onion and celeriac. Grate the carrots and rutabaga. Saute in butter.
4) Add soy sauce and saute 3 minutes more. Remove from the heat and add the squid.
5) Whisk together eggs, milk, salt and pepper. Pour over the squid mixture. Stir until set.
