Roast Ribs Of Mutton

Ingredients

2- 2 1/2 kg (4-5 pounds) dried mutton ribs
birch twigs
1 large rutabaga, peeled and sliced

Instructions

1) Cut the meat between the ribs into serving pieces. Soak in cold water overnight.

2) Peel the bark off the birch twigs and arrange in the bottom of a pot, or use a rack.

3) Arrange the meat on the twigs. Add water to just under the meat. Cover and steam about 2 hours.

4) After 1 hour, add the rutabaga and cook until tender.

5) Preheat the oven to 250 C (500 F).

6) Grill the meat in a hot oven until crispy.

7) Mash the rutabaga.

8) Serve with boiled potatoes, boiled rutabagas or rutabaga puree, and pan juices. Enjoy!
